When a sweet craving strikes and you want something quick, these blueberry quark muffins are the answer. They’re not only fast to make — they’re healthy too, because this recipe uses very little sugar. With just a few ingredients, you can have these blueberry quark muffins ready in a flash. Ingredients for 6 muffins:#
- 100 g blueberries
- 100 g quark
- 40 ml buttermilk
- 1 egg
- 25 g sugar
- 140 g flour
- 2 tbsp vegetable oil
- 1 tbsp honey
- 1/2 tsp baking powder
Method:#
Preheat the air fryer to 180°C.
Beat the sugar and egg until fluffy in a bowl. Add the quark, buttermilk, oil, and honey and continue mixing. Sift in the flour and baking powder and stir until combined.
Gently fold in the blueberries and fill silicone moulds with the batter.
Carefully place the moulds in the air fryer and bake for about 25 minutes. Check with a toothpick to see if they’re done.
Carefully remove the blueberry quark muffins from the air fryer and let them cool completely on a wire rack.
Once cooled, dust with icing sugar — and your delicious blueberry quark muffins are ready.
