Ingredients:

  • 150 g butter
  • 4 eggs
  • 100 g dark chocolate
  • 4 tbsp cocoa powder
  • 100 g ground almonds and 100 g chopped almonds
  • 1 pinch of salt

As a sugar substitute, you can use xylitol, honey, stevia, agave syrup, maple syrup, or date syrup. The amount depends on how sweet you like it — taste as you go.

  1. First, chop the chocolate finely and melt it in a bain-marie.
  2. Separate the eggs. Beat the egg whites with the salt until stiff and set aside.
  3. Whisk the egg yolks with the butter and your chosen sweetener. Then fold in the melted chocolate.
  4. Add the cocoa and ground almonds and mix well. Now gently fold in the beaten egg whites, then pour the batter into a greased springform pan.
  5. Bake in a preheated oven at 175°C (top and bottom heat) for about 30 minutes. Tip: baking time may vary depending on your oven. Insert a toothpick — if it comes out clean, the cake is done!

Now you can snack with a clear conscience — without gaining weight. Enjoy!
